When you are in the mood for a refreshing cocktail, you can’t do much better than the Mojito. In fact, as warm weather cocktails go, I am often undecided between the Mojito and the Margarita.
- 10 – 12 fresh mint leaves
- 1/2 lime, cut into four wedges
- 2 Tbls white sugar
- 1 1/2 oz white rum
- 1/2 cup (about) club soda
Add the mint, one lime wedge, and the sugar to a Collins glass. Muddle the ingredients in order to release the oils from the mint and lime. Add another wedge of lime and continue to muddle until the sugar is dissolved.
Fill the glass with ice. Pour the rum over the ice and top with the club soda. Stir and enjoy your Mojito.
