2 cups cooked sweet potatoes — peeled and mashed
4 tablespoons butter
3 large eggs — beaten
1 cup sugar
1 teaspoon vanilla extract
1 teaspoon nutmeg
1 tablespoon lemon juice
1/2 cup bourbon
1 unbaked pie shell
preheat oven to 400 degrees
Boil sweet potatoes until very tender, then peel and mash well.
Mix all ingredients together and place in an unbaked pie shell.
place in oven and immediately turn the oven to 325 degrees.
Bake for 45 minutes or until the center of the pie is set.

NOTES:
As sweet potatoes contain a large amount of water I recommend steaming the potatoes or baking them until soft.
