TACO PIE

Chef Julie found this terrific recipe for taco pie.  Imagine the thrill of the kids when they cut into this delicious dish.

This taco pie recipe is easy enough for any cook.  The recipe is also flexible enough that any cook can add a bit here and there to make it their own.  For instance, this recipe doesn’t call for any avocado; feel free to add it if you wish.  Do you love jalapeno peppers?  Peppers can be added to the meat mixture or sprinkled on top. What about baking cheese into the crust?  Don’t like potatoes? Try bisquick for the crust or a simple cornbread.  If you want a little texture, toss some corn chips on the bottom. Dive right in. use your imagination and turn this simple recipe into a family classic.

Ingredients:

  1. 1/4 cup Butter
  2. 2/3 cup Milk
  3. 1 package Taco Bell seasoning mix
  4. 2 1/2 cups mashed Potato Flakes (you could also use leftover Mashed Potatoes, just omit the Butter and Milk)
  5. 1 pound Ground Beef
  6. 1/2 cup Onion (chopped)
  7. 1/2 cup Salsa
  8. 1 cup Iceberg Lettuce (shredded)
  9. 1 medium Tomato (chopped)
  10. 1 cup Sharp Cheddar Cheese (shredded)
  11. Sour cream (optional)

Directions:

Preheat oven to 350˚f.

In a medium sauce pan, melt Butter; add Milk and 2 Tablespoons Taco Seasoning.

Remove from heat, add Potato Flakes, blend with fork until incorporated.

Press mixture into a 10-inch pan. Bake for 7-10 minutes until it just BARELY turns golden brown.

In a medium skillet, cook Beef and Onions until Beef is browned and cooked through…Drain. Add Salsa and remaining Taco Seasoning. Cook until bubbly. Pour into crust.

Bake 15 minutes, or until crust is golden brown.

Let cool for 5 minutes. Top with Cheese, Lettuce, and Tomatoes. Cut and serve with Sour Cream.
