Mother Motley’s Blueberry Buckle

3/4 cup sugar
1/2 cup shortening
1 large Egg
2 1/4 cups all-purpose flour
1/4 teaspoon salt
1/2 cup milk
2 cups blueberries (fresh or frozen)
2 1/2 teaspoons baking powder
1/2 cup sugar
1/2 teaspoon cinnamon
1/4 cup butter — chilled
Preheat oven to 350.
Beat 3/4 cup sugar and shotening until light and fluffy.
Add egg and beat well.
Stir together 2 cups of flour, Baking powder and 1/4 teaspoon of salt.
Add Flour mixture and milk alternately to sugar shortening mixture.
Beat until smooth after each addition.
Spread in greased 8x8x2 or 9x9x2 pan.
Top with Blueberries.
Combine remaining 1/2 cup flour, 1/2 cup sugar and Cinnamon.
Cut in butter till crumbly and sprinkle over blueberries.
bake in oven 45-50 minutes.

NOTES:
If using fresh blueberries let stand in bowl with pinch of brown sugar, lemon juice, cinnamon and melted butter.

Yield: 6 servings
