Thinking About: Sour Cream Mashed Potatoes (serves 4)
- 4 large Russet Potatoes (large dice)
- Salted Water
- 4 oz. Butter Salt & Pepper (to taste)
- 3-4 oz. Whole Milk
- 2-3 oz. Sour Cream
In 3 quart pot, place diced Potatoes in boiling, Salted Water; cook until knife slides easily through thickest Potato piece (about 7-10 minutes)
When done, drain Potatoes with colander and return to pot…Do not cool
Add Butter and Milk
Using Potato Masher, mix until desired consistency is achieved
Salt & Pepper to your liking
Fold in Sour Cream…Do not over mix
Garnish with chopped Chives Serve mashed potatoes hot
