ARBORIO RICE

Basic Arborio Rice

Arborio rice is a short-grained rice that is high in starch.  Arborio rice is the foundation of the classic Italian dish, Risotto, but can also be prepared in a, well, more traditional way.  The high starch content in Arborio rice is what gives risotto its creamy texture.  The rice should be prepared al-dente, or “to the bite,” which means tender on the outside, but retaining a bite in the center.  The al-dente preparation of rice is a bit different from the soft rice one is used to.

Preparation Ingredients

  1. 1 tablespoons Olive Oil
  2. ½ cup small Yellow Onion (small dice)
  3. 1 teas. Kosher Salt
  4. 1 cup Arborio Rice
  5. 1 clove Garlic (minced)
  6. 1 cup Chicken Stock
  7. ½ cup Water

Directions

1. Heat oil in a 2 quart saucepan over medium-high heat.

2. Sweat Onions (about 3 minutes)

3. Pearl Rice and Garlic (about 2 minutes)

4. Add chicken Stock and water to pan.

5. Bring to a boil, stir once, cover, and reduce heat.

6. Simmer rice, uncovered, until liquid is evaporated, 18-20 minutes.

7. Add additional Water as needed, until Rice is al denté

8. Finished Arborio Rice will have a slight crunch, it should not be mushy

9. Remove from heat and let stand, covered, 5 minutes before serving.
